In the end, I settled on CAT6, because for my needs (video streaming and some work with large files) it turned out to be the best option. But it is worth noting that the quality of the connection is affected not only by the cable itself, but also by the router. For example, with new routers, stability has become much better for me, even on old cables. But in general, CAT6 or even CAT5e should be enough for home, especially if you are not going to order some mega-high-speed Internet.
